21c Museum Hotels is seeking an Executive Chef to help shape and create a new restaurant/F&B program for 21c St. Louis to add to the 21c family (, , , , , , , , ).
21c Museum Hotels is rehabilitating the historic YMCA in downtown St. Louis. 21c St. Louis will support the city's renewal and serve as an additional catalyst for culture, entertainment and economic growth**.** Like its sister properties, 21c St. Louis will be woven into the fabric of downtown, welcoming both visitors and members of the community to experience its rotating exhibitions, participate in its programs and enjoy its culinary offerings. **Reports To:** Corporate Director of Food and Beverage Operations
**Responsibilities/Duties:**
* Create all F&B menus, maintains and changes them frequently.
* Ensure total guest satisfaction and ensure the finest quality of food and beverage.
* Maintain positive presence of face/voice of restaurant in community and media.
* Professionally develop, supervise and lead the management the, kitchen line and utility team.
* Professionally develop relationship with local/regional suppliers.
* Professionally develop relationships with regional and national chefs.
* Provide the highest and most efficient level of dining expected by the guest.
* Ensure the department is staffed sufficiently for each meal period.
* Make every effort to keep morale of restaurant high.
* Create a following of regulars.
* Oversee all hiring and training of team. Determine hiring and termination of all teammates.
* Control all costs: food, labor and operating expenses.
* Handle and resolve all team concerns.
* Collaborate and supervise Sous chefs regarding kitchen operation, maintenance and menu development.
* Ensure kitchen cleanliness, organization, and equipment maintenance.
* Constantly seek improvement in self, team, and restaurant.
* Maintain a positive, friendly attitude with team & guests.
* Write the weekly kitchen schedule.
* Read and react to guest surveys when adjustments need to be made.
* Assist Events Dept. with driving revenue, maintaining service, and winning business.
* Develop and administer all management and teammate reviews.
* Work closely with Director of Public Relations and third party agency to market Restaurant brand through various media channels.
* Maintain personal social media presence in conjunction with 21c Brand Marketing strategic plans.
* Meet with vendors to purchase new items, explores best pricing.
* Explore, with hotel and F&B Director, best ways to creatively market the brand and property. Must be efficient with current trends in electronic media and be comfortable utilizing those to benefit the property.
* Attend monthly financial statement reviews.
* Facilitate a monthly F&B management (FOH & BOH) meeting with the F&B Director.
* Identify and develop F&B teammates who have the ability to grow with 21c.
**Job Requirements:**
* Some college education.
* Three or more years of sous chef experience.
* Previous job in a kitchen line position.
* Solid computer knowledge in Microsoft office programs.
* Previous press and media exposure experience.
* Must be able to show enthusiasm for restaurant/property and come from a place of yes.
